Salmon Linguine

Ingredients:  • Salmon Fillets • Philadelphia Cheese • Green Beans • Whole-wheat Linguine • Red Bell Peppers

Cooking Time – 30-35 minutes

Hints – Dish is best served luke-warm

Method: Oven bake the salmon fillets for 25 minutes at 180°C/350°F/Gas mark 4.After the salmon has cooked for 10 minutes, add linguine to boiling water for 12-15 minutes.After the linguine has cooked for 5 minutes, add chopped green beans in to another pan of boiling water.Bake finely chopped peppers on a baking tray in the oven for the remaining 5 minutes of cooking time. Drain all food and combine all cooked ingredients in to a large mixing bowl and add Philadelphia cheese. Stir and serve.


 Chicken Curry

Ingredients: • Chicken breast • Onions • Carrots • Potatoes • Sweet Potatoes • Raisins • Courgette • Celery • Peppers • Mushrooms • Olive Oil • Curry Powder • Herbs – Thyme, pepper, garlic, ginger

Preparation Time – 40 minutes

Cooking Time – 1 Hour

Method: Oven bake chicken breasts at 180°C /350°F/Gas mark 4 (cook to your liking).Peel potatoes and sweet potatoes, chop and cook in boiling water for 5-10 minutes to soften the outside. Chop up remaining vegetables and fry in a pan with a drop of olive oil for 5 minutes. After 2 minutes of frying, add herbs and curry powder. Once chicken has cooked to your liking, chop up finely and put in to a cooking pot. Drain the potatoes, add them and the other vegetables to the chicken. Add boiling water to just below the top of the mixture. Simmer for 1 hour, adding raisins after 30 minutes. Add extra curry powder and herbs to taste.

Hint – To thicken mixture, add corn flour. Stir and serve.

Mexican Bean Bake

Ingredients: • Lean mince (500g) • 1 tin of baked beans • 1 tin of bean mix • Green beans (a handful chopped) • 1 onion (chopped) • Carrots (chopped) • Mushrooms (chopped) • Any additional vegetables you may like • Cheese • Olive oil • Seasoning – Thyme, garlic, Italian herb mix

Preparation Time – 15 minutes

Cooking Time – 20-25 minutes

Method: Heat oven to 180°C/ 350°F/Gas mark 4. Fry mince in a pan and cook until browned. Place herbs and vegetables into another pan with a little olive oil and fry on a high heat for 2 minutes. Add the cooked mince and vegetables into one pan and add the bean mix and baked beans. Cook for 3 minutes until sauce is heated through. Add mixture to an oven dish and sprinkle grated cheese over the top and cook until cheese is melted!

Vegetable Lasagne


Ingredients: • Lasagne sheets • Potatoes • Sweet Potato • Onion • Carrot • Peas •  Mushrooms • Cheese • Lasagne tomato sauce • Cheese sauce • Herbs to taste

Preparation Time – 40 minutes

Cooking Time – 20-25 minutes

Method: Heat oven to 180°C/ 350°F/Gas mark 4. Peel potato and sweet potato and slice thinly. Place on to a tray and allow to dry out in the oven for 10-15 minutes. Boil peas, chop and fry onion with sliced mushrooms. Prepare all remaining vegetables in to small pieces. Once potato is cooked, layer bottom of the dish with pasta sheets and add a layer of the onion and mushroom mixture. Then add a layer of the sliced cooked potatoes, spreading tomato lasagne sauce on top. Add a thin layer of grated cheese and peas then add sweet potato and carrots. Add on last layer of pasta sheets, cheese sauce and grated cheese. Add herbs to taste and bake until golden brown and piping hot.

Hint – Ensure the cheese sauce is made to a thick consistency
